We are all over old and new technologies with which garlic remains garlic, still transform itself. We love it so we share it: after a short pre-baking we preserve the garlic over cold-smoke for a few days. The result is a silky, sweetish, sometimes creamy soft, at times raw-ish snack. With a pinch of smoke of course. Excellent also with bread, for butter-creams and perhaps for a surprise in salads.
